Christmas With Big Bubba
Big Bubba, the chef, will be serving a very modest menu of baked ham, rolls, candied yams with marshmallows, green bean cassarole, lasagna and ambrosia. The corporation has collected the necessary money and I am ready to go shopping for the feast.
Sunday we will all gather to celebrate the holiday at the Brooklyn wiseguys apartment. The Jewish Doc, the South Texas Mexican, the Boston dimbulb who never contributes money, my sister and I. If you wondered about the lasagna on the menu it's not for the Brooklyn wiseguy, it's for our good friend the Doc. The Big Trucker Boy won't be there since he is on the road with Werner Enterprises somewhere unknown.
It should be a great New Year for all. The Big Trucker Boy has a new job, the Doc's new house construction should be done, the Brooklyn wiseguy may possibly have a few winning bets, my sister is off parole, the Mexican Kid will complete his real estate deal and the Boston dimbulb will continue to sponge. Big Bubba has had sixty straight good years and I know this one will be yet another.

I am serving Roast Duck at Beakerkin's house of pain live from NYC.
I am so used to -6 that I had to wear a T shirt in NY.
The candied yams was a special request of the Brooklyn guy. He doesn't eat any vegetables but peas. I love candied yams with marshmallows because I grew up with my Mom fixing them almost every holiday.
One of the best sausage brands here is Kiolbasa. The name of the family that owns the company is Kiolbasa. Of course (for those who don't know) kiolbasa means sausage in Polish. I never can get enough of that Kiolbasa. My other favorite is called Pollaks Wedding sausage. The reason it is called "Wedding" is because the long link is laid out like a heart on the tray.

Your dinner is similar to what I serve, except for the lasagna. But we do have a pasta salad.
Nothing like ham and rolls (or biscuits) for Christmas! This is the one time of year that I don't worry about cholesterol levels.
Hope that your Christmas celebration was a merry one. As you can see, I'm a day late getting here. With mother-in-law, who has mid-stage Alzheimer's, in town from CA, things are hectic here. She's a sundownwer, and we had one rough night. But late on Christmas Day night, she finally recognized my husband, her eldest child. That recognition was a great Christmas gift for all of us!
Always on Watch, the lasagne was the Brooklyn guy thinking. I told him yesterday lasagne didn't make sense for the (Jewish) Doc. He said that's what we used to eat when he was a boy. I observed that he was an Italian but the Doc and I weren't. I was going to fix a Jewish style brisket or a nice corned beef and cabbage for New Years. That's out. I went to the grocery today and spotted a $35 frozen turkey marked down to $11. So, guess what?
I come from a long line of Southern cooks. I learned from my Mother and Grandmother (the best of all family coots) how to cook. Both of my sons are excellent cooks having learned from me and their (Korean) mother.
My uncle had Alzheimers for about 10 years. In the final years he knew nothing. I gained a real respect and admiration for the Houston Fire Department. My uncle was also a Big Bubba, slightly taller than me. My aunt was almost 6' tall and always slender. Sometimes my uncle would get out of bed at night and end up on the floor. My aunt could not get his dead weight up off the floor. My aunt would call the Houston Fire Department and they would dispatch a truck from around the corner. The firemen would get my uncle back in bed and sometimes they would stay awhile for a cup of coffee and visit with my aunt. Great guys!
My aunt, bless her soul, kept my uncle in his home and refused to put him in a nursing home.
My mother-in-law has a boyfriend (!!!) who takes care of her. He's a saint!
They left early this morning. I can get some rest now.
